WANTED: Dark Chocolate Cake Recipe

I’m in search of a moist, super-dark chocolate cake with equally dark chocolate frosting recipes.  Do you have suggestions?

After researching the Internet, I found this recipe Capital Grade Dark Chocolate Cake. On Saturday, I gave it a try. Being a brand new recipe, I followed the instructions to the letter. Its rich chocolaty batter filled us with anticipation of a delicious finished product. Unfortunately, it failed to deliver.

What was the problem? Two things – too dry and scour. Do you have experience using a cocoa-based dark chocolate cake? What elements in this recipe can create these undesirable qualities? Have you ever made a dark chocolate cake using only melted bittersweet chocolate?

1. What was the first sign of spring that you saw this year? I could see the beginning of spring earlier than usual this year. I think it was about mid-February when I looked out my kitchen window and noticed teeny tender green buds forming on the trees. I thought to myself, “Oh! WOW, Mother Nature is waking the landscape a wee bit too early.” I was certain at that point, we’d have a nasty hard freeze killing everything. So far – knock on wood – our temperatures have not dropped back into the 30s for months. We usually are hit with a spell of Dogwood Winter about now, but this hasn’t materialized yet. However, if we were in Denver then we would be experiencing just that with a spring snow storm.

2. What was the last package you received in the mail?  Internet purchasing is on the tops of my list. Let’s see, it would have to be something I ordered recently. Oh yeah, I remember! Monday, we got DS’s diploma. Our umbrella school issues an official diploma, but when our first daughter graduated we didn’t know this and ordered a lovely, personalized diploma from Home School Diploma.  Here is a picture of DD#1 holding her’s.

3. Do you have any Easter or spring traditions in your home? Years ago when DH and I were dating, our church had a beautiful sunrise service followed by breakfast, and then, the regular Sunday morning service. Living in a rural community meant a long drive and it didn’t make sense for folks to leave to only come back in a few hours, so they worked breakfast in on Easter Sunday. It was a great time for fellowship with one another, too. After our kids came onto the scene, we normally visited DH’s parents on Easter weekend and we attended that special sunrise service most of their early years.  We also did the whole Easter bunny & basket routine. That being said, you know we were big into coloring and hiding eggs, too.  One of my fondest memories was when we made the Resurrection Cookie recipe with the children. This experience really warmed my heart.

4. Do you hand wash dishes or machine wash them? Honestly, a little of both. I use cast iron skillets so these have to be washed by hand. Sometimes, the dishwasher can’t handle stubborn stains and it’s not uncommon for at least something coming out of the machine to get a hand washing.

5. If I had an extra hour each day, I’d simply wouldn’t know how to use it. I think I would naturally want to finish my chores so to not have that hanging over my head another day. It seems like there never is enough time to getting housework done. However, if that was off-limits, then I’d like to take that time to use solely for me – crafting or writing or having a cup of tea or whatever pleasures I wanted at that moment. With this line of thinking, I won’t be surprised to hear, if pigs can fly…Oh, Patrice,  if only in our dreams…not pigs flying, but to have an extra hour. Sounds mighty nice to me! God knew what He was doing when He made the day 24 hours long, instead of 25. I guess it’s best to not question the Creator and to find contentment with our day.

    It sounds like you have had years of lovely Easters. It’s such a special time of year.Flying pigs? My, my! Don’t tell Hamlet and Bertha. Lovely picture of your graduate.I have one graduating this May. I could swear she just started school yesterday. Time flies, and it still would even if we had another hour in the day. Blessed Easter!

    I like your answers to Patrice’s questions. As for the chocolate cake question, you might try Taste of Home’s website. They have really, really decadent recipes on there for everything chocolate.

    I’ve never made a chocolate cake with melted chocolate squares, but I’ve done brownies. You just melt it with the butter and mix it into the butter and sugar. I imagine you could taste it at that point, before you add the eggs, to see if it’s sweet enough.
