Thursday Thoughts: Delicious Home-made Fruit & Nut Granola

 

Do you like granola cereal? If so, then I want to share with you a delicious homemade fruit and nut granola recipe that my good friend passed to me that’s very easy to make.

Fruit and Nut Granola

Ingredients:
¼ c. vegetable oil
¼ c. Maple syrup
6 Tablespoons brown sugar
1-teaspoon vanilla
2-tablespoons honey
3 c. rolled oats
½ c. each of dried cranberries dried blueberries and chopped nuts of your choice.
¼ c. of sunflower seeds, and or pumpkin seeds
Directions:
  1. Put the oil, syrup, sugar and vanilla in a bowl.  Microwave for about one minute.   Stir once out of the microwave.
  2. Mix the oats, berries, nuts, and seeds together in a big bowl.  Add the microwaved mixture and stir to fully coat the oats.
  3. Spread on a greased or parchment lined cookie sheet.  Bake at a very low setting 200° for an hour.
  4. Take it out and let it cool.  It will break apart in big clumps, kinda like peanut brittle.   Store in an airtight container. I used the above photographed a large mason jar (half-gallon) my MIL gave me years ago.

Note: I didn’t use honey in my recipe because DH is allergic to it and took the maple syrup up by 2-tablespoons. I used Ocean Spray blueberry-flavored dried cranberries and pecan pieces. I did not use any seeds because I did not have these and the recipe tasted delicious without them. Incidentally, you may want to watch the bake time. Despite the low baking temp, 1-hour was a wee bit too long. Next time, I’m going to only bake recipe for 50-minutes.

    that looks delicious! And I think I actually have all that stuff in my pantry.

    I made Rice Krispie squares last week because they had the boxes with the red and green rice pieces. the kids love the festive look. I will definitely make another batch and hide that from them in the freezer to be used over Christmas.

    I make my grandma’s shortbread cookies every year. that’s the traditional Christmas goody.

    1 cup butter
    1- 1/2 cup flour
    1/2 cup icing sugar
    chopped maraschino cherries

    Preheat Oven to 350 Degrees
    cream together butter and icing sugar. gradually add the flour and mix until well blended.
    Drop tsp. size portions onto a parchment paper lined cookie sheet. Garnish with cherry pieces.
    Bake for 10-15 minutes; until edges golden brown.
    LET COOL – cookies will be very soft.

      I love shortbread cookies. I want to make some this Christmas, but I don’t know if I’ll get around to it or not. I like Rice Krispy treats. Ever since we got the recipe for snowballs off rice krispy treats box several years ago, then that’s what I make nearly every Christmas. It’s basically the same as the original recipe, except you shape treats into ball shape, roll in coconut and powder sugar. These are really tasty!

    I love the granola for snacking. I don’t add it to a bowl with milk…I just munch it with a cold glass of milk. Keeps it ‘crunchy’ that way. And this recipe sounds simple and delicious.

    We have yet to go driving to Candy Cane Lane to view the neighborhood that goes all out decorating their yards…hafta do that soon.

    I have never had granola cereal but it certainly looks delicious and of course good for the health. I have not yet made any Christmas dishes but I look forward to preparing the Christmas dinner this year that will consist of baked ham, roast chicken with stuffing, potato salad, baked pineapple slices and cherries etc. I may also bake a plum pudding.
