Mississippi Mud Cake

I’m sneaking yet another post but I really hate to just sit on something until a better time comes along which frequently takes months.  Last week, we celebrated our 43rd wedding anniversary.  Usually, I make DH’s favorite, New York style Cheesecake but in recent months we reluctantly realized that cream cheese possibly doesn’t agree with us thus forcing us to remove it from our diet hopefully only temporarily.   An anniversary isn’t complete without a special dessert, right?  Lately, I’ve had mild chocolate cravings. This seemed like a good time to kill two birds with one stone.  I’m not sure why I wanted Mississippi Mud Cake but that’s where my Internet recipe hunt took me.  I thought I had all the ingredients but when I discovered I didn’t have sour cream, I made a modification to the original recipe and if that lone ingredient makes a difference then I’d really like to taste it because honestly my improvising rendered  a plenty moist enough finished product! Here’s a copy of my recipe for you to download.   

I don’t shy away from challenging recipes like I once did but you’ll be happy to know that this one is easy.  The best thing is the Droste cocoa never disappoints giving me an “Oh, my Cathy!” sensation from the first to the last chocolatey bite.  I highly recommend giving Droste cocoa a try if you haven’t.  It’s difficult to find in my area, but thankfully it’s available at Amazon.

    Happy Anniversary! Oh that looks good. I made a Mississipi Mud Cake (or was it pie?) one time for Alex’s bday and it was fabulous, but lots of steps required, totally worth it!!

    This sounds decedent but I love to go that route. I would probably not want to add the marshmallows and I would not use as much sugar as called for. The icing…I would make my own…whipping cream, 6-7 tbsp freyer’s Cocoa and 1/2 cup, maybe 3/4 cup icing sugar. Whip it up until stiff peaks form and spread it on the cake. Yummy. Sad to hear your tummys don’t like the cream cheese…I hope this is temporary. It sounds like you had a beautiful time together but I think you both do every day. That is what’s so lovely. I know this song…its a fun song to dance to

    I’m happy to know that you and DH had a wonderful anniversary celebration, dear friend. Thanks for posting this recipe for Mississippi Mud Cake. There are two things I’d like to say about it. First, your improvising reminds me of Mrs. Shady’s method. No matter what she’s cooking or baking, she always adds her own ideas and ingredients to the recipe. Invariably the results are delicious. Secondly, I’m sure she will want to see your recipe because she and her son both have a sweet tooth. There are always cakes, pies, cookies, donuts and/or candies on the kitchen counter. I will ask her about Droste cocoa. If it isn’t available in our local supermarkets we will order from Amazon. Our favorite supermart is having supply chain problems and limiting the purchase of certain items including coffee creamer, much to Mrs. Shady’s chagrin. She doesn’t like to drink coffee black the way I do.

    Yessum, I discovered that song “Cake By The Ocean” by Joe Jonas and his dance-pop band DNCE in 2016, the year I focused a lot of attention on current pop and dance-pop recordings on my old blog.
