Maple Nut Fudge

Maple Nut Fudge

 

In the past, we treated ourselves to some yummy maple nut fudge found in one of our favorite fudge shops in the Smoky Mountains.  For years, I’ve whined about how I would love to make some of this fudge, but never got around to doing it until NOW.

Part of my Christmas fun is to share the joy by making home-made goodies not only for  the family, but for Robin’s office. This week I made not only batch, but two batches of maple nut fudge for him to take to his buddies.

The recipe is simple and the end product is MMM, good!

Maple Nut Fudge
“Classic maple Fudge recipe. Very rich, very sweet and not hard at all so long as you use a candy thermometer.”

Ingredients:

1 1/2 cups maple syrup
1 3/4 cups sugar
2/3 cup heavy cream or 1 (5 ounce) cans evaporated milk
1/4 teaspoon salt
1/4 cup unsalted butter
1 teaspoon vanilla extract
1 cup chopped walnuts

Directions:

  1. Line an 8 inch square pan with nonstick foil and spray with cooking spray.
  2. Combine syrup, sugar, heavy cream and salt in a medium saucepan, preferably a non stick one;bring to boiling over medium high heat, stirring constantly; once boiling, cook 7 to 8 minutes or until mixture registers 238 degrees f. on a candy thermometer.
  3. Remove pan from heat; with an electric mixer, beat in butter and vanilla.
  4. Continue to beat on high power for 8 to 9 minutes, or until thickened, light ion color and fudge loses its glossy finish; stir in nuts and spread in prepared pan; let stand until firm about 25 minutes then cut into squares.

    Do you use any maple syrup in the recipe? I’m not seeing it listed. I just finished a few days in the Great Smokey Mts. and am looking for the perfect maple fudge recipe.

    I love fudge, but I’m more of a chocolate girl…with lots of nuts.

    My mom and husband would love the maple fudge best, I think! And I wouldn’t turn my nose up at it either, that’s for sure.

    I am, and always have been, a total failure at making fudge! Oh, it always tastes delicious, but either we have to eat it with a spoon, or it hardens to one strange lump on the way from the pot to the plate. I always buy fudge when we go to the Smokies!

    I’ve been making fudge like crazy this last week. I’ve just discovered the joys of egg nog fudge~decadent! Of course, I use my goat’s milk for making my fudge.

    Ooh, this sounds delicious. I love the flavor of maple and my hubby loves nuts. I might have to make a batch this weekend.

    Fudge is one of those things I like a bite or two every once in awhile but for the most part I find it too sweet to eat a whole piece.

    I can’t even remember the last time I made or bought fudge. That may change soon as I look at your photo again.

    1) I don’t like fudge much, it’s too sweet for me.

    I love fudge, but wouldn’t have to worry about gaining weight from Maple Nut, as maple is not my favorite flavoring in candy! I can pass that one by. But, put some peanut butter, or mint, or amaretto fudge out and I’ll scarf it up!
