Festive Tradition – Black Walnut Cake

I’m not Martha Stewart. I’m just an ordinary person after all, as you can clearly see.  Yeah, who knew, right? 🙂

This is such a delightful festive season. I love Christmas traditions. One thing I enjoy doing every year is making a special dessert to go with Christmas dinner. Several  years ago, my mother-in-law introduced this recipe to me and now I make it for my family.

 

 

Black Walnut Cake

 

 

1 1/2 c. butter, softened
2 c. brown sugar
1 c. sugar
1 c. milk
5 eggs
3 c. flour
3 ½ tsp. baking powder
1 tsp. salt
2 c. Hammons recipe-ready black walnuts
1 ½ tsp. vanilla

Preheat oven to 350º.  Prepare three 9-inch cake pans –grease bottom & sides, add wax paper to bottom of each pan. I also add oil to the top of the wax paper.  Mix all ingredients together thoroughly, except for walnuts. Then add walnuts to batter.  Bake 40-minutes.  Cool completely, loosen from pan, and turn out carefully. The sides of the cake will be very crumbly.

Cream Cheese Frosting

½ c. butter, softened
8oz. cream cheese, softened
16oz. powder sugar
1 ½ tsp. vanill
3-4 tbsp. milk
Add all ingredients and mix well. You may need more or less of the milk to suit your preference.  Add milk, gradually so to not make frosting too thin<

This cake should be kept in the refrigerator because of the cream cheese frosting. Just get out and allow to stand to room temperature before serving, then place back in frig.

Do you kinda get the idea my brain is a bit frazzled? Yesterday was my big 5-0 birthday. I’m still trying to wrap my mind around that one. How did this happen anyhow? I mean hitting this milestone so SOON. 🙂 Have a fruitful Thursday!

    Oh this is great, and looks like one I just made last Sunday! I use pretty much that same recipe for my frosting….cream cheese is good in mashed potatoes too!

    My husband loves any kind of nuts so I’m sure he would like this one. I’ll be making a copy.

    Pecan pie was a holiday tradition when I was growing up and I still love it. The one I make now is not as sweet however.

    Both mine and my husbands parents are gone so it’s just us for the holidays. It nice to have the quiet time together.

    Oh that looks yummy. Each year when my Mom was alive we would make butter balls for dessert. It was a tradition each Christmas day. Now we spend the holidays with my Brother’s family.

    PS. We still eat pumpkin pie on Christmas, but we always have lots of other goodies around like cookies, banana bread, etc.

    Oops, you got me on the food here too much, forgot about the questions for a minute. 🙂
    1) desert? Cappuccino made with my favorite condense milk and froth to the way I like.
    2) no parents from either side. we are on our own, and tradition-less.
    My two children usually spend a couple days with me, and some with their dad, it’s different every year. Now that we have the little princess, she is with us every minute and we can’t be without her either. 🙂

    The most important is that it taste good. If the cake looks like a painting and tastes bad, I prefer the other way around, lol !

    I think I remember this cake from a grandmother or auntie Christmas celebration and it looks so yummy! I’m not sure what’s my favorite and will be hosting just our little 5 person family. Happy 50th! I’m just a few years behind and can so relate to wondering how it happened.
