Cranberry Pumpkin Bread

I’m slacking off in Blogosphere for the holidays a bit. Over the weekend, I did some baking. Originally I shared my Cranberry Pumpkin Bread recipe several years ago but since then it’s gone through many revisions to suit our taste.  Here’s my updated version.

The evolution its taken has gone more from a bread to a cake recipe I think. When I mentioned that to DH, he said, “You’re welcome”. I said, “Well…everything can’t be cake!” He came back with, “I know, somethings have to be pie! ” What can I say, he’s quick on his feet. 😀 Anyway, both recipes are good, it’s just a matter of what you like.

Here are my responses to Joyce’s Wednesday Hodgepodge questions this week.

1. It’s Mickey Mouse’s birthday (November 18)…happy birthday Mickey! He reads here, right? Have you ever been to Disney, any of the parks at all? Are you a Disney superfan or something less than that? They’re open right now so tell us, would you go if you had the time/money/a free trip? I have not been to Disney but I hope we’ll get a chance to visit someday.  I’ve never been a super fan. I liked their classic animated movies but in the past 10 or 20 years they haven’t done anything that matches their old stuff.  They seem to put too much importance on creating unrealistic empowered female characters.
 
2. Your favorite place to go when you want to be quiet as a church mouse? Would those who know you well describe you as more church mouse or perhaps more like mighty mouse? WOW, what a contrast in characters.  I’d think my friends would say I’m ‘mighty mouse’. Actually, I think I’m somewhere between the two.
 
3. The day before Mickey’s birthday happens to be National Homemade Bread Day. Did/will you celebrate? Do you bake your own bread? Last time you had hot out-of-the-oven homemade bread? What’s your favorite kind of bread? I actually baked a fresh batch of buttermilk biscuits on Monday. That’s close enough, right?  I definitely sampled the biscuits. I had a bite or two while DH ate about 6 or 7. He’s a huge bread eater.  I think any yeast risen breads are awesome.  I’m going to make a batch of Angel Biscuits next week. Yum!
 
4. What’s something you might say is ‘the greatest thing since sliced bread‘? Right now, I can’t think of anything but I saw a video on Parler that makes reference to this that cracked me up.  I found it on YouTube if you’d like to check it out.
 
5. Let’s keep the gratitude theme we started last week rolling on through November. Share with us five little things you’re grateful for today. Small blessings. One catch-they all must start with the letter T. Gotta keep us thinking, right? 1) Tough attorneys fighting for President Trump and preserving American’s freedoms. 2) Tips for cooking/baking found on the Internet to make life easy. 3) Tempting taste bud dishes. 4) Time management skills that prevents a mental melt down during the holidays. 5) Tree is partially up. Yep, I set our little tree up. All we need to do is add the decoration.
 
 
6. Insert your own random thought here.  At the start of my post I mentioned I’ve been baking.  Another recipe I baked up the other day is a pecan pie. Yum!  This year I used a different recipe from what’s found on the Karo syrup bottle. It’s a very close match found at Southern Living. I made two minor changes to their recipe. I cut the butter in half and doubled the pecans. I also made my crust from scratch. 😉
I hope it tastes equally as good as it looks.

    Yummy recipe, Cathy! I visited Disney World many times when I lived in Orlando but haven’t been there in the last several years. Btw, I noticed your comment from the other day about my prompt and as an FYI, I am taking a hiatus from posting a weekly prompt. Perhaps, I’ll bring it back after the first of year but for now, I am enjoying having more time to do other things. 😘

    I’ve been craving pecan pie of late. They used to be easy to find in Kroger’s and other places back in East Tennessee. I don’t see them here in Los Angeles very much. I should start looking around.

      Making a pecan pie isn’t hard. If you don’t want to fool with home-made crust buy a frozen one and then prepare the center. You’ll be glad that you did. 😉

      Don’t forget to add some softened cream cheese on the side when you have a slice. Yum, is that ever good! I’m looking forward to have a piece on Thanksgiving morning while we watch…I was going to say The Macy’s Thanksgiving Day parade but I bet that’s been canceled. Oh shoot! Regardless of what we watch Thanksgiving morning, I’m having some CPB with cream cheese and a cup of coffee. That’s sooo divine! :p

    I took a large slice of that cranberry pumpkin bread. Yummy. I don’t bake anymore and neither does hubby. I sure enjoy the fruits of those that do.

      I like baking and doing other creative things in the kitchen. There will come a day when I won’t be able to so for now I’m enjoying every moment spent making delicious meals & goodies. 🙂

    If it wasn’t for 6.5 cups of sugar, I’d be making a test batch right now! Alas, I avoid using sugar, so will just make my typical cranberry-orange bread.

    Thanks so much for sharing that recipe for your Cranberry Pumpkin Bread. I have been begging Mrs. Shady to make pumpkin pies for Thanksgiving, but I might like Cranberry Pumpkin Bread even more. I will show this to her. Clearly DH has a sweet tooth and he is lucky to have a sweetie who knows her way around the kitchen and is willing to make mouth watering cakes, pies, breads and candies. (I just read your later section about baking buttermilk biscuits. I think I could have topped DH and eaten more than 6 or 7 of them – probably a dozen! 🙂 … and now I just read about (and saw) your pecan pie. I’m drooling over your homemade baked goods, Cathy!

    It is indeed amazing that the picture you took with the car in motion turned out so sharp and clear. It’s a serene scene of grazing animals, and the crescent moon looks tiny in the sky.

    I enjoyed reading your Hodgepodge answers. I live a short distance from Disney World, yet I avoid the place because it is too touristy. I prefer natural country settings like the ones you and DH regularly explore. I also agree that female characters don’t always need to have super powers. Much of the charm of Disney features of the past was the soft femininity and vulnerability of the young women.

      I have a left over pumpkin pie in the freezer from last year, so I won’t have to make one this Thanksgiving. Be sure to refer back to the old Cranberry Pumpkin Bread recipe if you don’t want all that sugar. The cranberries are a bit tart for the original recipe and if you don’t mind that blend of sweet & tartness then you may want to try it first. Something I forgot to mention in my recipe is this yields two loaves plus a little more. I used two loaf pans, a shallow baking dish, and a large custard cup for baking. I misplaced my third loaf pan or I would’ve used it. Oh yeah, another thing is have Mrs. Shady to line her pans with parchment paper. This makes for an easy release and removal from the pans. The pumpkin tends to make it rather sticky.

      Disney is very touristy. I imagine living not so far from it makes it less appealing than for those who live faraway but the magic of the place stirs the heart of the child within all of us. I know you think a lot like I do concern women’s femininity. Those forcing their idea of a ‘strong woman’ really fail to see what a true strong woman is all about. It has nothing to do with overpowering anyone, especially men physically. I’d like to see reboot of the Disney princesses from long ago. One of my favorite Disney animations is Beauty and the Beast. It has action, laughs, and heroin is beautiful, soft, and smart. 🙂 Thanks for joining me this morning, my friend!
