Festive Tradition – Black Walnut Cake

I’m not Martha Stewart. I’m just an ordinary person after all, as you can clearly see.  Yeah, who knew, right? 🙂

This is such a delightful festive season. I love Christmas traditions. One thing I enjoy doing every year is making a special dessert to go with Christmas dinner. Several  years ago, my mother-in-law introduced this recipe to me and now I make it for my family.

 

 

Black Walnut Cake

 

 

1 1/2 c. butter, softened
2 c. brown sugar
1 c. sugar
1 c. milk
5 eggs
3 c. flour
3 ½ tsp. baking powder
1 tsp. salt
2 c. Hammons recipe-ready black walnuts
1 ½ tsp. vanilla

Preheat oven to 350º.  Prepare three 9-inch cake pans –grease bottom & sides, add wax paper to bottom of each pan. I also add oil to the top of the wax paper.  Mix all ingredients together thoroughly, except for walnuts. Then add walnuts to batter.  Bake 40-minutes.  Cool completely, loosen from pan, and turn out carefully. The sides of the cake will be very crumbly.

Cream Cheese Frosting

½ c. butter, softened
8oz. cream cheese, softened
16oz. powder sugar
1 ½ tsp. vanill
3-4 tbsp. milk
Add all ingredients and mix well. You may need more or less of the milk to suit your preference.  Add milk, gradually so to not make frosting too thin<

This cake should be kept in the refrigerator because of the cream cheese frosting. Just get out and allow to stand to room temperature before serving, then place back in frig.
