Do you like granola cereal? If so, then I want to share with you a delicious homemade fruit and nut granola recipe that my good friend passed to me that’s very easy to make.
Fruit and Nut Granola
- Put the oil, syrup, sugar and vanilla in a bowl. Microwave for about one minute. Stir once out of the microwave.
- Mix the oats, berries, nuts, and seeds together in a big bowl. Add the microwaved mixture and stir to fully coat the oats.
- Spread on a greased or parchment lined cookie sheet. Bake at a very low setting 200° for an hour.
- Take it out and let it cool. It will break apart in big clumps, kinda like peanut brittle. Store in an airtight container. I used the above photographed a large mason jar (half-gallon) my MIL gave me years ago.
Note: I didn’t use honey in my recipe because DH is allergic to it and took the maple syrup up by 2-tablespoons. I used Ocean Spray blueberry-flavored dried cranberries and pecan pieces. I did not use any seeds because I did not have these and the recipe tasted delicious without them. Incidentally, you may want to watch the bake time. Despite the low baking temp, 1-hour was a wee bit too long. Next time, I’m going to only bake recipe for 50-minutes.
