Mississippi Mud Cake

I’m sneaking yet another post but I really hate to just sit on something until a better time comes along which frequently takes months.  Last week, we celebrated our 43rd wedding anniversary.  Usually, I make DH’s favorite, New York style Cheesecake but in recent months we reluctantly realized that cream cheese possibly doesn’t agree with us thus forcing us to remove it from our diet hopefully only temporarily.   An anniversary isn’t complete without a special dessert, right?  Lately, I’ve had mild chocolate cravings. This seemed like a good time to kill two birds with one stone.  I’m not sure why I wanted Mississippi Mud Cake but that’s where my Internet recipe hunt took me.  I thought I had all the ingredients but when I discovered I didn’t have sour cream, I made a modification to the original recipe and if that lone ingredient makes a difference then I’d really like to taste it because honestly my improvising rendered  a plenty moist enough finished product! I don’t shy away from challenging recipes like I once did but you’ll be happy to know that this one is easy.  The best thing is the Droste cocoa never disappoints giving me an “Oh, my Cathy!” sensation from the first to the last chocolatey bite.  I highly recommend giving Droste cocoa a try if you haven’t.  It’s difficult to find in my area, but thankfully it’s available at Amazon.
