#1 Food Festival

Food is everyone’s favorite subject, right?  Interestingly, in a local report yesterday named Knoxville a top dog in food festivals.  Which food category you ask? Biscuits! Knoxville’s International Biscuit Festival stole the show for first place.   Read about here!

My husband is a HUGE bread eater.  He can put home-made rolls and biscuits away like there is no tomorrow.  This year’s event kicked off Memorial weekend, May 27th – 28th .  My husband joked around with me like, why don’t you enter the contest and I teased back saying, I wouldn’t feel right because it wouldn’t give anyone else a chance.

All kidding aside, I do make some tasty biscuits.  Could I a win a contest? Well, I dunno.  The excellent news is, I have my husband’s seal of approval on them and in my opinion, you can’t get any better than that.  Wouldn’t you agree?  In case you would like a simple recipe, then give this a try…

Ingredients:

4 cups self-rising flour
2 cups buttermilk
1/2 cup canola oil

In a large bowl, mix all the ingredients together. Dough will be sticky. Turn some of the dough out onto a floured surface. Dust top of dough and fold over a few times before patting out, then cut biscuits out. Place biscuit dough onto a lightly oiled cookie sheet, repeat process until pan is full.  Brush tops of biscuit dough with buttermilk.  Bake on 400 degrees for 15 to 20 minutes.

These are fabulous straight out of the oven piping hot.  Pass the butter, please! Mmm, Mmm good!
