Can you please tell me what happened to February? I can’t believe it’s the last Tuesday of the month. I’m not totally complaining mind you. Time flying by has it’s upside, like the return of spring and warm weather. We got some snow last Thursday. It didn’t amount to a lot and it quickly vanished but the overnight lows stayed in the low to mid 20s.
What have y’all been into? Me, well…last Friday I tried my hand again at making home-made pizza. It’s been quite sometime since I’ve ventured down this road. I used the same the same Fail-Proof Pizza Dough recipe as last week when I made the Stromboli as well as the Thick & Rich Homemade Pizza Sauce recipe (this time I had all the ingredients replicating to near 100%). Aside from these basics, my toppings included mozzarella, pepperoni, Italian sausage, pepper medley (frozen green, yellow, an red peppers), fresh onions, and black olives with pepperoncini on the side. The verdict…very good job for my first attempt but additional changes needed made, so I made second one. I added additional seasonings to the Italian sausage, mainly oregano and basil. I opted to use a combination of fresh and shredded mozzarella cheese, cut down on the bake time and temperature which drastically improve the flavor. We were very pleased with the results and I’m eager to try it again. Once I feel comfortable with the changes then I’ll share my final recipe with you but here are a few images that I snapped of both pizzas.
I did one more thing in the kitchen this weekend and that was I made DH a peach pie almost from scratch. I used canned peach in heavy syrup to make the pie filling. I used the Easy Oil Pie crust recipe again. I ordered some pie weighs but they haven’t arrived yet, so after doing a little Internet research one tip I found on some forum was to use an egg white wash on crust before pre-baking. We didn’t care too much for the egg wash and it didn’t help much with the crust shrinking. It wasn’t bad and it looked pretty. See…
I’m enjoying my surge of creativity in the kitchen and DH isn’t complaining one bit. In fact, he’s cheering me on! Okay, now for dose of giggles with some Leap Year humor.

I was really proud of how well my first pizzas turned out. I’ve attempted to do this in many years ago but my success wasn’t nearly as good as this go around. I am giving the home-made pizza making another try this evening. I’m making a few changes so stay tune for updates on how this pans out for me. 🙂

Congrats on a good pizza. A few years ago my hubby tried to make a pizza..it looked like. Pot pie and it was…not good. I took a picture of it..hahahaa. The pie looks good and I think it would taste good.

I hope to become a better baker. Pie making isn’t my forte. My late MIL was a pro at pie making. Maybe someday I’ll match her skills. 🙂 We all can’t be the same, so let your daughter do the baking and you do the cooking. Yes, definitely trial and error is the best way to learn. It’s also great having DH help. He’s a natural when it comes to saying, it needs more or less of this or that, too.

It’s important to stay true to your diet. I get that totally! Years ago when I was doing the Atkins diet I found an alternative pizza option using flaxseed. It wasn’t bad at all but naturally I like regular pizza better. 🙂

Yummy! I’d spend lotsa “dough” to taste your pizza, dear friend! 🙂 It look delicious, and I’d asked for a slice or two of your peach pie for dessert. You should not downplay your culinary skills, Cathy. You are obviously tickling DH’s taste buds with the goodies you prepare. Cooking is yet another of your many talents.

Don’t worry about the slow visits. My blog door is open 24/7, so no worries here dear friend. As I mentioned before you have other priorities to tend to, so don’t stress it. You’re way too kind. I was proud of how well the pizzas turned out, especially the second one. It was really quite tasty. I hope to make more this weekend. I finally got my pie weights yesterday, so I’m definitely anxious to try them out. I might make DH a cherry pie for this weekend. It’s gonna be a wet, dreary day here and then the temps are expected to drop once more. I know you aren’t but I’m ready for spring!

Great leap year jokes! Mom makes her own pizza all the time and loves it. She says it is fun because she can put more healthy stuff on it that she likes. Enjoy!
That’s pAwesome! I like having control of what I put and how much on my pizzas, too. All too often restaurants skimp on toppings. Pizza Hut does a good job but most others do not which makes me feel like we’re being cheated. A large supreme pizza costs about $18-20, so when they skimp on toppings then who wants to pay for mostly bread? No me! I can’t wait to make another!
