Can you please tell me what happened to February? I can’t believe it’s the last Tuesday of the month. I’m not totally complaining mind you. Time flying by has it’s upside, like the return of spring and warm weather. We got some snow last Thursday. It didn’t amount to a lot and it quickly vanished but the overnight lows stayed in the low to mid 20s.
What have y’all been into? Me, well…last Friday I tried my hand again at making home-made pizza. It’s been quite sometime since I’ve ventured down this road. I used the same the same Fail-Proof Pizza Dough recipe as last week when I made the Stromboli as well as the Thick & Rich Homemade Pizza Sauce recipe (this time I had all the ingredients replicating to near 100%). Aside from these basics, my toppings included mozzarella, pepperoni, Italian sausage, pepper medley (frozen green, yellow, an red peppers), fresh onions, and black olives with pepperoncini on the side. The verdict…very good job for my first attempt but additional changes needed made, so I made second one. I added additional seasonings to the Italian sausage, mainly oregano and basil. I opted to use a combination of fresh and shredded mozzarella cheese, cut down on the bake time and temperature which drastically improve the flavor. We were very pleased with the results and I’m eager to try it again. Once I feel comfortable with the changes then I’ll share my final recipe with you but here are a few images that I snapped of both pizzas.
I did one more thing in the kitchen this weekend and that was I made DH a peach pie almost from scratch. I used canned peach in heavy syrup to make the pie filling. I used the Easy Oil Pie crust recipe again. I ordered some pie weighs but they haven’t arrived yet, so after doing a little Internet research one tip I found on some forum was to use an egg white wash on crust before pre-baking. We didn’t care too much for the egg wash and it didn’t help much with the crust shrinking. It wasn’t bad and it looked pretty. See…
I’m enjoying my surge of creativity in the kitchen and DH isn’t complaining one bit. In fact, he’s cheering me on! Okay, now for dose of giggles with some Leap Year humor.
