Do you remember the large old fashion cream filled Easter eggs? My mother used to buy one for my daddy every year. I always thought were absolutely the best! My husband has fond memories of those tasty confections, too.
When our kiddos were small, we were fortunate enough to buy them. However, like everything else they have nearly disappeared from store shelves. You can find small cream filled eggs, but not the large ones. A few years ago, I began searching the Internet for recipes. I was lucky and found at least four different varieties – buttercream, fruit and nut, peanut butter, and coconut.
Life has a way of interfering with your most well thought out plans. The opportunity never came to make this recipe. Determined, I decided to do it this year. Last week, I consulted DH and DS on the four varieties. They voted on the coconut version to give a test run.
Excitedly, I launched into making this new candy. Finally, I was going to see if this would compete with my old childhood favorite. Once the first batch was ready, I eagerly took my first bite and…yum, delicious!
