How many times have you heard this, “What’s for supper Mom?” I can tell my son over and over and over what’s for supper yet still those famous words roll right off his tongue without missing a beat.
Last night, I prepared a simple meal of fried chicken strips. “Simple?!” you say. Yep, simple! I slice the chicken breasts into three to four strips and roll the strips in flour (salt & pepper to taste). I believe the cooking term is dredge when you coat your meat lightly. I’m not a chef, except in my mind, so gourmet lingo shoots over my head. I’m more like a pinch of this and a pinch of that cook. Anyhow back to my chicken. I place my chicken strips in a heated skillet. I used olive oil. I like cooking with it. It creates a slightly different taste to foods than canola oil. I didn’t time it, but I’d say it took less than 5 minutes of cooking time on each side. After I finished, I placed the fried chicken strips in aside in a casserole dish for a quick heat up in the oven.
I didn’t waste the leftover oil in my pan, I drained off just a bit and then proceeded to make some gravy to top off the mashed potatoes I would make. As it turned out, the chicken dripping added a delicious flavor to the gravy and was quite excellent on the chicken, too. It was sort of like Country Fried Steak, but with chicken. Yummy good!
To complete the meal, I steamed some broccoli and pulled some left-over home-made buttermilk biscuits out of the freezer to reheat. The boys (my husband and son) stood around in the kitchen drooling, as the aroma from the oven floated to their nostrils. Smiles crept across their faces, which said, “I’m in heaven!” Whether the meal is mediocre or excellent, it is always a reward to cook for those who appreciate my effort. Thanks, boys!
